How to make a nutrient packed salad- fast!

Now Spring is well and truly here, we we can forget about soups and hot dishes and bring back the salads! For some new season inspiration, below is a link to my tasty Broccoli Salad- if prepared in a thermomix, it literally only takes 8 seconds to make!

Ingredients:

1 carrot, peeled

1/2 a lemon

2 green apples

1 large head of broccoli

1/2 a red onion

3 tbsp of natural yoghurt

salt and pepper to taste

optional herbs ie coriander, mint, parsely

If you don’t own a Thermomix, this salad is still quick and easy to make and requires no cooking! Simply finely chop the carrot, apples, broccoli, and onion (and herbs if using) and mix together in a bowl. To finish stir in the natural yogurt, squeezed lemon juice then add salt and pepper to taste!

Lemons are really alkalising, apples are high in pectin therefore an amazing digestive enzyme to help break down the food and lastly the broccoli is a fantastic source of iron, protein, zinc as well as B1 and B6, Vitamin E and magnesium.
